Why weight beats volume

A cup is a measure of space, so how much it holds depends on how densely the ingredient packs. Professional bakers weigh ingredients because 120 g of flour is always 120 g, while “1 cup” can vary by a fifth. If you only own measuring cups, fluff the flour, spoon it in and level it with a knife — that is the method these weights assume.

Frequently asked questions

How many grams are in a cup?

It depends on the ingredient, because a cup measures volume, not weight. A cup of water weighs about 236 g, a cup of all-purpose flour about 120 g and a cup of granulated sugar about 198 g. Pick the ingredient in the converter above.

Why do different websites give different weights for a cup of flour?

How the cup is filled matters more than anything else. Flour spooned into the cup and leveled weighs about 120 g; scooped straight from the bag it can weigh 140–150 g. Brand, humidity and sifting change it too. This converter uses the spoon-and-level values from the King Arthur Baking ingredient weight chart.

Is a US cup the same as a metric cup?

No. A US customary cup is 236.6 mL; the metric cup used in Australia, New Zealand and Canada is 250 mL, about 6% larger. Choose "metric cups" in the unit list if your recipe uses them.

Try “psi to bar”, “cups”, “binary” or “5 ft in cm”.
